Vegan Chik'n and Green Beans w/ Smoky Coconut Bits


Smoky Coconut Bits

  • 1 tbsp. tamari

  • 2 tsp. liquid smoke

  • 2 tsp. maple syrup

  • 1 cup coconut flakes

  • 1/4 tsp. garlic powder

  • 1/4 tsp. paprika

Chik'n and Green Beans

  • 1 - package Abbott's Butcher Chik'n

  • 12 oz. green beans, washed and ends snapped

  • 2 cups cooked brown rice

  • 1/4 tsp. salt

  • 1/4 tsp. pepper


  • 1 tbsp. vegan butter for flavoring


  1. To prepare coconut bits: Set your oven to 325F degrees and line a baking sheet with parchment paper.

  2. In a mixing bowl, add in all ingredients except coconut flakes. Whisk until mixture is well incorporated.

  3. Add in coconut, and toss making sure to coat thoroughly.

  4. With a slotted spoon, add coconut flakes to your prepared baking sheet.

  5. Bake for 15 minutes tossing half way through to evenly cook.

  6. Remove from oven and set aside to cool and crisp up.

  7. While coconut flakes are baking, cook Abbott's Butcher Chik'n According to package and set aside.

  8. Put green beans in a large skillet and add in 1/4 cup water. Bring pan to a boil over high heat. Once boiling, cover pan and cook green beens for 3 minutes. Uncover pan, and stir in butter if using.

  9. Add in cooked chick'n, brown rice, salt, and pepper; mix until combined. Top with smoky coconut bits.
