Vegan Caprese Grilled Cheese

Happy National Grilled Cheese Day! Who doesn't love a classic grilled cheese? We do too, but we wanted to mix it up a bit with an easy elevated plant based version. Lucky for us Sprouts has all of our favorite plant-based ingredients and they are just around the corner!


  • 4 slices of Sprouts seedsational whole grain bread

  • 2 tbsp. vegan spread butter, earth balance

  • ½ cup shredded vegan mozzarella, Follow Your Heart

  • 2 tbsp. Sprouts vegan basil pesto

  • 4 slices tomato

  • 1 tbsp. balsamic glaze


  1. Pre-heat a large frying pan over medium heat. Butter one side of each slice of bread. Place two slices of bread, butter side down on to the pan and add ¼ cup of shredded cheese to each slice. Cover and let cook for 2-4 minutes to allow cheese to slightly melt. Place the other two slices, butter side down, onto a plate.

  2. While cheese is melting, add 1 tbsp. of pesto to the other two slices of bread on the non buttered side.

  3. Remove the lid from the pan and add 2 slices of tomato to each slice of bread with cheese. Then, top with pesto bread slices, butter side up. Gently press down and then flip sandwiches and allow to cook for an additional 2 minutes until golden brown.

  4. Drizzle or dip with balsamic glaze.
