Vegan BBQ Chik'n Lettuce Cups w/ Avocado Slaw

Every week, during my grocery hauls Sprouts, I always find a new plant based protein to try. This new plant based chick’n, which you can find in the freezer section, from @likemeat is a great meat substitute! Bonus it is non GMO, has 19g of protein, and has a great meat like texture. Summer is almost here and if you are looking for a great summer poolside meal without the heaviness, our BBQ chik'n lettuce cups are a refreshing twist to your classic BBQ chicken sandwich.




BBQ Chik'n Lettuce Cups w/ Avocado Slaw


Ingredients:

  • 1 - package Like Meat BBQ Chick’n

  • 1/4 cup of plant based BBQ sauce, extra for topping

  • 8 leaves of little gem romaine or butter lettuce , washed and pat dry

  • 3 cups tri color coleslaw mix

  • 1 medium ripe avocado

  • 1/4 cup fresh cilantro leaves

  • 1/2 tsp. salt

  • 1 tsp. minced garlic

  • 2 tbsp. fresh lime juice

  • 1/2 - 2/3 cup water

Directions:

  1. In a food processor, add in avocado, cilantro leaves, salt, garlic, lime juice, and water. Blend on high until creamy and smooth. If you need to thin it out add a tbsp. of water at a time until desired consistency.

  2. In a medium mixing bowl, add coleslaw mix and pour avocado dressing on top. Mix until completely coated. Place in the refrigerator until ready to use.

  3. In a large skillet, cook Like Chick’n according to package. When cooked through transfer to a cutting board and chop chick’n into small pieces.

  4. Place chik’n pieces into a small mixing bowl and add BBQ sauce and mix well.

  5. Stack lettuce leaves 2 at a time, to create 4 individual lettuce cups.

  6. Scoop 1/3 cup of BBQ chik’n into the center of each individual cup. Top with avocado slaw.
