Clean and Lean Banana Bread { V & GF }

Ingredients:


  • 1 overripe banana

  • ½ cup unsweetened almond milk

  • ¼ cup maple syrup

  • 1 tsp. apple cider vinegar

  • 1 cup gluten-free old fashioned oats

  • 1 cup almond flour

  • 1 tbsp. baking powder

  • 2 tbsp. coconut sugar

  • 1 tsp. cinnamon


Directions:


1. Preheat the oven to 350F degrees and spray a loaf pan to prevent sticking. ( I doubled up and lined with parchment paper as well to help with removing the bread from the pan. )


2. In a blender add milk, banana, maple syrup, and apple cider vinegar. Blend until smooth.


3. In a food processor, add oats, almond flour, baking powder, coconut sugar, and cinnamon. Blend until well combined and resembles fine flour. Add contents to a mixing bowl and make a small well in the center.


4. Pour wet ingredients into dry and mix well and let sit for 5 minutes.( mixture will start to puff up a little.)


5. Pour batter into loaf pan and bake for 40 - 45 minutes. Remove from the oven and let cool for about 10 minutes before removing from the loaf pan.
